Oil-free Pesto

Pesto is supposed to have oil in it, right? I thought this too, but decided to play with some fresh basil and see what happens. The pesto is not as viscus, but very flavorful and does not turn as brown. So it stays looking fresh much longer! And if you like more creamy pesto, add some mashed avocado.

  • 1 cup packed fresh basil
  • 1 clove garlic
  • 1/2 cup walnuts
  • Pinch sea salt (optional)
  • Pinch of pepper
  • 2 Tablespoons lemon juice OR 1 Tablespoon lemon juice and 1 Tablespoon chickpea juice or water
  • 1/2 an avocado (optional)
  • Favorite add-ins

Place everything but the avocado in a food processor and process till smooth. If wanting a less lemony pesto, replace one Tablespoon of lemon juice with chickpea water or plain water. Add the avocado if wanting more creamy. Stir pesto into pasta with any of your favorite add-ins (I added grape tomatoes and navy beans) and serve. Yummers!
