Tomato Sandwich

The farmer’s market is open again and I am in heaven. I LOVE fresh tomatoes and heirloom tomatoes are amazing. When I can get these, I make this simple open-faced sandwich and savor every bite. What you will need:

2 slices your favorite bread, toasted

1 ripe tomato, sliced

12-16 baby spinach leaves

Vegan cream cheese or hummus

Spread a thick layer of hummus or cream cheese on each piece of toast, add a layer of baby spinach and top with a layer of tomato. I’m already drooling. Yummers!
