Potato Plate

The CSA kept giving us potatoes last fall. I love fresh potatoes, so this was not a problem. One night I was staring into the freezer and got an idea. Mmm… This is what you will need:

1 package fake chicken pieces of some sort. I used the orange chicken from Trader Joe’s

4 yukon gold potatoes, diced

1 red bell pepper, diced

1/2 cup diced carrots

1 medium onion. diced

1 TBS minced garlic

2 TBS sesame seeds

1 tsp avocado oil

Sea salt and pepper to taste

Saute onion, garlic, potatoes, and carrots in avocado oil until cooked, about 15 minutes. Add the red bell pepper about half way into the other vegetables being fully cooked. Prepare the non-chicken according to the directions on the package and add to pan. Add sesame seeds and salt and pepper to taste. Serve hot over a bed of baby spinach with a dollop of pesto on top. Yummers!

This easy recipe can include any vegetables you have on hand. For example, switch out the yukon potatoes for sweet potatoes or use broccoli instead of the carrots and bell pepper.
