Tres Colores in Santa Fe

Don’t let the physical menu discourage a visit to Tres Colores in downtown Santa Fe, New Mexico.

We decided to walk around the Santa Fe square at night to see the luminarias and holiday lights. So pretty!

And we got hungry. When in New Mexico, definitely seek out the traditional New Mexican food. We headed to Tres Colores, a short walk from the square.

The menu looks like it’s full of non-vegan options. But many of the dishes can be made with vegetables.

We ordered guacamole and salsas to start. The staff assured us all the salsas were vegan and we dug in.

Next was a roasted beet salad that was perfect.

Mmm…

I picked out the vegetable tamales smothered in green chili sauce that were moist and delicious. Hubby devoured the vegetable tacos.

It was a yummers dinner.

The space is casual and we ordered at a counter. We would absolutely return and the staff was very kind. Tres Colores gets three out of five vegan cupcakes.
